Your mother always wanted you to eat your
vegetables and now we’re giving you a delicious way to have your cake &
carrots too! While these mouthwatering carrot cake cupcakes might now have been
what mom had in mind, I’m sure she wouldn’t disapprove!
Carrot Cake Cupcakes
This carrot cake is exceptionally moist
with the addition of applesauce which adds sweetness without adding more sugar
which would add more calories. This batch makes a lot of cupcakes so you
can just make a cake to save more time. You will need a 13 by 9 by 2
inches rectangular cake pan that is greased. Bake for 1 hour and 10 minutes.
Just stick a knife through the cake to make sure it comes out clean. If not
keeping cooking for 5 minute increments until it does.
5 cups all-purpose flour
2 ½ cups granulated sugar
1 tb + 1 ¼ tsp baking soda
1 tb. salt
1 tb. ground cinnamon
8 eggs, room
Juice of one
orange approx. ¼ cup
2 1/3 cups
4 ½ cups
coarsely chopped walnuts
Preheat oven to 350 degrees. In large bowl
whisk together the first 5 ingredients until well combined. In a separate
medium bowl whisk the eggs, then whisk in the juice of one orange and
applesauce. Whisk in the canola oil until combined. Using a
spatula, fold in carrots and walnuts until combined. Pour the carrot mixture
into the flour mixture and fold until just combined and there are no more flour
pockets. Use a 1 cup dry measuring cup if making king-size cupcake or a ¼
cup for regular cupcakes. Bake king-size cupcakes for 45 minutes or regular
cupcakes for 22 minutes.
Yields 15 king size cupcakes or 60 regular
cupcakes (Note: I like to make a combination of 12 king size cupcakes and 12
4 (8 ounce
packages) cream cheese, room temperature
2 tb. heavy
Meanwhile make the frosting but don’t frost
until the cupcakes are completely cooled. In a large bowl beat cream
cheese until smooth. Add vanilla extract and 1 cup of powdered sugar at
time on low speed so the sugar doesn’t fly everywhere. (Trust me I have covered
myself in sugar when I try to put it on higher speed to be quick. It’s not
worth it) Turn off beater and scrape the sides really good. Add the heavy
whipping cream and beat on low until combined then on medium high speed beat
the frosting for 3 minutes.
