Another month comes in where I need to create a delicious
brunch menu for our Beauty & Brunch Event. For those of you who have never
been to Mojo Spa for our Beauty & Brunch let me give you a few details so
you can appreciate what I am talking about.
Beauty & Brunch is like Breakfast in Bed but instead of being in bed
you are sitting in a cozy pedicure chair getting pampered with a pedicure while
you enjoy a tray of my homemade gourmet brunch.
So the brunch process begins with trying to create something
different and familiar at the same time!
French toast is something familiar and I just wanted to put a twist on
it. I have made my own yeast from
scratch which has been a labor of love because I need to feed it everyday. It’s the homemade yeast starter that
gives it that amazing flavor. I know
that because of my homemade yeast all the breads I make have great flavor so
this is the first step in creating a delicious gourmet brunch.
At first, I put in cocoa powder and a little sugar thinking that it
would come out a little sweet with a hint of chocolate. The bread tasted like normal bread with a
hint of pumpernickel. So, cocoa powder
was not enough to make this bread chocolaty. I thought of chocolate chip
cookies and cinnamon swirl bread and viola!
I increased the sugar and swirled chocolate chips throughout the
bread. This bread tasted like bread with
hints of chocolate throughout.
I sliced the bread nice and thick and made my usual French Toast
recipe with it. Then, I topped it with freshly sliced bananas, a drizzle of
homemade caramel sauce, and maple syrup. This past weekend was the first time
we tested out the new brunch and it was amazing. All the plates came back
completely empty. Chocolate Banana
French Toast was a huge hit!
