month comes and I need to create a new Brunch menu for our Beauty & Brunch event every
Sunday. I love pancakes especially when they are light & fluffy so I
experimented with different ingredients. I tried a few things that did
not work so well: sour cream, yogurt, and yeast.
was trying to reduce the sugar I used in the recipe since I was using chocolate
chips which are already sweet. I replaced some of the sugar with
applesauce for the sweetness and it worked. Not only did the pancakes take
delicious but they were also very fluffy. Then I remembered that I had used
rice flour in some of cookie recipes to make them lighter. I replaced some of
the flour with rice flour and voila extra fluffy pancakes.
the extra large milk chocolate chips so there would be bites where they would
burst in your mouth and other bites where you eat the pancakes only with the
strawberries. Customers have been raving about this brunch and have
begged for the recipe. I am sharing the recipe or you can come in for Beauty & Brunch until the
end of June and enjoy it while being pampered at the same time. Enjoy!
Applesauce Pancakes with Chocolate
INGREDIENTS: (all ingredients
must be a room temperature)
In a large bowl whisk together:
1 + 2/3 cup all purpose flour
1/3 cup rice flour
1/3 cup sugar
1 tsp. baking powder
½ tsp baking soda
1 tb. ground cinnamon
1 tsp salt
Whisk together in another bowl:
1 cup milk
1 cup applesauce
4 tb. melted butter, cooled
1 tsp vanilla extract
Pour the wet ingredients into the
flour mixture and stir until just combined. Don’t worry about lumps. Don’t over
mix b/c it will make hard pancakes.
Heat skillet and melt some butter
to grease pan then wipe away excess with a paper towel.
Add batter then sprinkle
chocolate chips on top. Wait for bubbles to form and then flip the pancake
about 1 minute. Cook pancake for another minute and place on plate lined with a
paper towel to absorb excess moisture or serve immediately.
