




This is one of my favorite stops on my trips to the Farmer's Market on Sundays. It is Nichols Farm & Orchard where I buy loads of veggies for the week. I love all the different varieties they have of carrots, beets, potatoes, etc.
I have been making lots of different veggie burgers with all the vegetables, brown rice, ground walnuts, and eggs to bind them together. I make them different every time with what I have purchased but I will measure next time so I can provide a recipe for everyone to use.
Here are some quick and easy tomato recipes for cooking at home or even when you are entertaining
TOMATO IN POD APPETIZER



Ingredients:
small cherry tomatoes
fresh basil leaves
sliced pumpernickel bread or french bread
store bought hummus
olive oil
salt and pepper
Directions:
These little appetizers are the cutest thing ever. I found this great pumpernickel bread at the farmers market with raisins and walnuts which provide a little sweetness and crunch. If you cannot find any pumpernickel then just use french bread sliced. I spread some hummus on each piece of bread then topped with a large basil leaf and 3 small cherry tomatoes. If the cherry tomatoes are too large then slice in half and place 2-3 flat side down. Drizzle with a little olive oil and sprinkle with salt and pepper.
TOMATO CUCUMBER SALAD



Ingredients:
1 basket of cherry tomatoes, halved
1 small cucumber, chopped
2 tb. fresh basil leaves, finely chopped
Dressing
2 tb. yogurt
1 tb. olive oil
sprinkle with salt and pepper
Directions:
Add all vegetables to a medium bowl. In another small bowl whisk together the dressing. It will not look completely emulsified like the grocery store dressings because its completely natural. Pour dressing on top of tomato salad. Toss to coat. Serve immediately
I love to dip bread in the pool of dressing that's left over. Delicious!
